Chicken Pesto

Italian inspired food is one of my favorite types of food to make. Recently I was craving a dish made with chicken. But not just any chicken dish – a chicken dish made with pesto.

So I got a few a ingredients and threw them together  and surprisingly I turned out with a really flavorful and creamy chicken dish. So without further ado I present my “Chicken Pesto” dish.

Chicken Pesto 

Serves 4

You’ll need a couple of handy ingredients:

1 lb. chicken fillet breasts or 4 fillet chicken breasts

1/3 cup sliced onions

2-3 green onions chopped up

3/4 cup heavy cream

1 cup chicken broth

2 Tbs. pesto

1 tsp of marinara sauce

1 tsp flour

1 tsp garlic powder

1/4 tsp black pepper

1/4 tsp salt

3 Tbsp. olive oil or vegetable oil

Grated Parmesan Cheese to serve

  1. Start off with cleaning and rinsing your chicken breasts. Season them with black pepper and salt. 20180501_210223
  2.  Meanwhile, in a pan heat up your oil on medium heat. When the oil is warm enough.20180501_210352
  3. Add the chicken breasts to the pan and cook them till they are cooked thoroughly and a light golden brown on each side . 20180501_21140120180501_212250
  4. Once the chicken is done take it out of the pan and place on a paper towel.   Set aside any excess oil you may have. Throw in your sliced onions and saute till they are golden brown. Be sure to scrape off the brown bits stuck to your pan.

  6. Add the garlic powder.
  7. Then add your  heavy cream, reduce the heat and stir.  20180501_214130
  8. Add your pesto and continue to stir for a minute or two to allow the flavor of the pesto to spread.

  10. Add your chicken breasts back into the pan and pour in your chicken broth.  Be sure to coat each breast with the sauce. 20180501_21482020180501_214856
  11. If you want your sauce to be on the thicker side, add your teaspoon of flour mixed in some chicken broth to your sauce.   Let the sauce and the chicken simmer for 5-10 minutes.
  12. Lastly add your green onions prior to serving. 20180501_215939
  13. Serve with a side of your choice (I chose Penne) and sprinkle parmesan cheese on top.  I also served it with my sauteed squash and carrot  (Recipe coming soon).
